Healthy Macaroni and Cheese

1 1/2 cups whole wheat pasta
1 1/2 cups broccoli, carrots or any other veggies
1 onion, chopped
1 T olive oil
6 slices laughing cow light cheese
1 2/3 cup soy milk
1 T whole wheat flour
1 t Cayenne pepper
1 t Italian Seasoning
1 cup sharp cheddar cheese, 2%
1/4 cup whole wheat bread crumbs or panko crumbs

Heat oven to 425 degrees.  Cook pasta according to directions.  Add vegetables during the last 3 minutes of cooking.  Drain pasta mixture.

Meanwhile, in a large saucepan cook onion and garlic in olive oil until tender.  Remove pan from heat and all Laughing Cow cheese slices.  Stir until cheese is melted.

Whisk together milk and flour in a bowl until smooth.  Add all at once to onion mixture.  Cook and stir over medium heat until thickened.  Stir in Cheddar cheese until melted.  Add cooked pasta mixture, spices and stir to coat.

Transfer to casserole dish.  Sprinkle with bread crumbs.  Bake for 15 minutes or until brown and bubbly.
