Maple and Cayenne Glazed Chicken

2 (3-pound) chickens
Extra-virgin olive oil
Kosher salt
1 cup real maple syrup
2 teaspoons cayenne pepper

Preheat the oven to 400 degrees F.  Cut chicken in half and remove wing tips, spine and breast plate.  Toss the chicken generously with olive oil and salt, to taste.  Place the chicken on a parchment lined sheet tray.  Roast the chicken until the skin is brown and crips, only 3/4 the way done (roughly 20-25 minutes).

In a small saucepan, combine maple syrup and cayenne over medium heat.  Cook until syrup is very thick, about 1/2-3/4 reduction.  Generously brush each piece of chicken with the syrup/cayenne glaze.  Return the chicken to the oven for another 10-12 minutes, reapplying the glaze two more times while cooking.  Remove the chicken when the skin is dark.  Let the chicken rest for about 10 minutes.  And enjoy!
